As a family brewery, we are committed to traditional craft brewing. During the production of our beers, we give priority to handwork wherever possible over sophisticated machines and computer controlled processes.
The experience and the skills of our brewing master and his supporting brewers count for us more than the information transmitted by computer sensors. Our beer is living “handmade” food, not simply an anonymous and sterile industrial product.
Up to today we respect the German Law of Purity (Reinheitsgebot) established in 1516, saying about only 3 ingredients that may be used in brewing process: Malt, Water and Hop. According to ancient brewer customs we use cold fermentation and we mature our beer at low temperatures in horizontal tanks.
We strictly reject thermal methods of preservation such as pasteurization or short term heating. Gentle filtration preserves the beers taste and valuable ingredients.
